Build up of tailcoats inside - anyone?

So, I spent some time looking at old tailcoats on ebay.

One thing that these seem to have in common with uniforms is the thickness of the padding inside. They are really built up.

Looking through the literature I have so far gathered, I haven't seen this technique described anywhere, see pics below.

Does anyone know what this method is called? I am also interested to hear if anyone has any seen any book describing the technique? Basically it seems to involve stitching through the lining to get a quilted effect.
